Almond crusted honey mustard salmon 3

2 (4 oz.) Salmon fillet
2 tablespoons ground almonds
2 teaspoons yellow mustard
2 teaspoons honey
1/2 teaspoon olive oil
1/2 teaspoon lemon juice


  1. Preheat oven to 350 degrees F.
  2. Roast ground almonds in the oven for 5-7 minutes.
  3. Meanwhile, mix mustard, honey, olive oil, and lemon juice in a bowl.
  4. Spread each slice of salmon with 1 1/2 teaspoon of the honey mustard mixture.
  5. Reserve remaining mixture.
  6. Spread 1 tablespoon of the toasted ground almonds over the salmon.
  7. Bake for 22 minutes in preheated oven.
  8. Drizzle with remaining honey mustard mixture.

Serving Size: 1 salmon fillet
