An Egg-stravaganza

The weather has finally changed and it’ definitely feeling like winter outside. I don’t know about you but my favorite way to start a cold, winter day is with a nice warm breakfast. There are plenty of options for a hot meal on a winter morning but there is no better way to start the day than with egg! January is National Egg Month after all.

 

Eggs are a great source of protein, iron, and several vitamins and minerals. And eggs are not just good for breakfast but can be incorporated in your meals throughout the day to give you a boost of energy and help you feel satiated without being overstuffed.

 

Brown or White?

 

There is a lot of controversy over whether you should buy brown or white eggs. Which is better? Is one healthier than the other? Do they taste different? Although brown eggs have been marketed to appear healthier or the “organic” choice, the truth is there are no real differences in brown or white eggs. White eggs come from hens that are white-feathered while brown eggs come from hens that have reddish-brown feathers.

 

You might be asking yourself, if there are no differences, why do brown eggs tend to cost more? Brown eggs laid by these brown hens tend to be larger than white hens. A larger hen requires more feed so the distributor makes up for this by raising the price on their eggs. So brown or white, they’re both good but if possible, aim to get locally raised eggs. Not only will you be supporting your local community and reduce energy, they will be high quality, fresh eggs.

 

Egg-celent Ideas

 

We all know how to make eggs in the morning- scrambled, sunny-side up, poached, etc. but how do we incorporate them into our meals for the rest of the day. I find it easy to boil a few eggs at once. That way I can have an easy and quick protein packed snack on the go. You can eat them whole or you can slice them up as a topping for lunchtime salads throughout the week.

 

Another way to utilize eggs is to make your own spin on fried rice. One of my favorite ways to make fried rice is with brown rice, cauliflower, edamame, egg, low-sodium soy sauce, scallions and carrots to make a healthier version of your favorite rice dish.

 

Remember, egg whites contain all of the same nutrients as a whole egg without the cholesterol. Although eggs may have many wholesome properties, excessive cholesterol intake may contribute to atherosclerosis and heart disease later on in life. Take steps now to improve your future health by using egg whites when possible. Egg white omelets for everyone!
