Pumpkin Muffins

Pumpkin Muffins

Serves 12

Ingredients:

1 1/2 cups whole wheat flour
1/4 cup sugar
1 tsp. salt
1 tsp. ground nutmeg
1 1/2 tsp. ground cinnamon
3/4 tsp. baking powder
1/2 tsp. baking soda
1 cup canned pumpkin puree
1/2 cup unsweetened applesauce
1/2 cup chopped walnuts
1/2 cup raisins

Instructions:

  1. Preheat oven to 35o degrees F.
  2. In a medium bowl, combine flour, sugar, salt, nutmeg, cinnamon, baking powder and baking soda; mix well.
  3. Add pumpkin puree, applesauce, walnuts and raisins to mixing bowl and mix well.
  4. Spray muffin pan with nonstick spray and evenly divide batter amongst muffin cups until 2/3 full. Bake for 12-15 minutes or until toothpick inserted into center of muffin comes out clean.
