Refreshing Papaya Strawberry Soup with Ginger and Lime

Ingredients:

1 small ripe papaya, peeled and sliced (reserve a few chunks for garnish
8 medium frozen strawberries (do not defrost)
2 tbsp. lime juice
1/2 tsp. fresh ginger, minced
1 tsp. honey
1 tbsp. plain nonfat Greek Yogurt, plus extra for garnish

Instructions: 

  1. Place the sliced papaya, strawberries, and lime juice in a food processor or blender.  Process until smooth, at least 2 minutes.  Add remaining ingredients and blend for another minute.  Chill in refrigerator.
  2. Pour soup in bowls.  Garnish with added Greek Yogurt and reserved papaya

Serving Size: 1 cup
