Sweet Potato and Apple Stacks Recipe

Sweet Potato and Apple Stacks 2 (2)

Serves 6

Ingredients:

3 medium sweet potatoes
3 medium apples
1/4 cup sugar
1 tablespoon orange zest
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup orange juice

Instructions: 

  1. Microwave sweet potatoes on HIGH for 8 minutes. Peel and cut into 1/2 inch slices.
  2. Peel apples and slice crosswise into 1/2 inch rings.
  3. Combine sugar, orange zest, nutmeg and salt in a small bowl.
  4. Alternate slices of sweet potatoes and apples in a deep 1 1/4- quart casserole dish.
  5. Sprinkle sugar mixture over each layer.
  6. Add orange juice and cover. Microwave on high for 6 minutes.

Serving Size: 1 stack (approximately 6 slices in each stack)
