Hearty Vegetable ChiliHearty Vegetable Chili

Serves 6

1 medium onion, chopped
2 cloves garlic, chopped
1 jalapeno pepper, seeded and finely chopped
2 celery stalks, chopped
1 medium green bell pepper, chopped
1 (16-ounce) can crushed tomatoes
2 teaspoons chili powder
½ teaspoon salt
1 (15-ounce) can black beans
1 (15-ounce) can dark red kidney beans

1. Sauté onion, garlic, jalpeno pepper, celery and green pepper in a medium saucepan.
2 Add canned tomatoes and bring to a boil.  Add chili powder, red pepper and salt and simmer for 10 minutes.
3. Add beans and heat through.
