Warm Brown Rice Salad with Peas, Sundried Tomatoes, and Mint

Serves 3

Ingredients:

1 cup brown rice, cooked according to package instructions
1 cup frozen peas
1/2 cup sun-dried tomatoes
1 1/2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 – 2 tablespoons fresh mint, chopped (alternatively, you may use basil or parsley)

Instructions: 

  1. Saute frozen peas in 1 tablespoon water for 3-5 minutes until no longer frozen and peas are a bright green color.
  2. Add peas and all remaining ingredients to the warm cooked rice. Mix well.
  3. Serve warm or at room temperature.
