Watermelon-the Perfect Summertime Fruit

Watermelon childWhen you think about summertime fruits which ones come to mind?  I know for me it’s always watermelon! Perhaps it’s because it is made up of mostly water (92%), making it refreshing for summer.  Or, maybe it’s because the sweetness of this large melon compliments the summer feel.  For whatever reason, watermelon has been coined as a sweet, summertime fruit.  As a result, it is no coincidence that National Watermelon Day is in the beginning of August, celebrated on August 3rd. Be sure to up your watermelon intake while it is in season by celebrating this weekend!

 

Over the past decades, nutritionists and other health professionals have been researching the health benefits of watermelon.  As it turns out, watermelon is not only delicious it is also incredibly healthy! Watermelon provides a wide array of vitamins including vitamins A, B6 and C.  Vitamin A enhances eye health and boosts immunity. Vitamin B6 helps your immune system build antibodies, which fight against disease. And, vitamin C helps fight off viruses and infections.  It is also known for its anti-aging qualities.  As you can see, this is one powerful melon!

 

Traditionally, watermelon is eaten in wedges.  When I picture my summertime childhood memories, I think back to holding the juicy wedge during camping, picnics, and block parties.  I can distinctly recall the juices running down my face and being left with sticky hands.  As this is a fun way to indulge in the sensational fruit especially for children, there are other ways you can enjoy your watermelon too.

 

Here are some interesting and tasty watermelon recipes for you to try this month:

 

Watermelon Feta Salad – Use spinach leaves as your salad base, cut watermelon into bite sized pieces and add to the spinach along with a handful or two of raspberries.  Next, add low fat feta cheese, chopped red onion and basil.  Dress with a light raspberry vinaigrette.

 

Watermelon Grilled Cheese Sandwich – Add thin watermelon slices and arugula to your grilled cheese sandwich for lunch today to give it a summer spin.

 

Watermelon-Pineapple Cole Slaw – Add bite size watermelon chunks and pineapple to your traditional cole slaw mix.  This will be a people-pleaser at your next backyard party!
