Marinated Beef Skewers
Serves 6
Ingredients:
1 lb. shoulder steak, trimmed
1 tbsp. lemon juice
1 garlic clove, minced
1 tsp. oregano
1 tbsp. olive oil
1/4 cup red cooking wine
1/4 cup parsley, chopped
Cherry tomatoes, optional
Instructions:
- Cut beef crosswise into 18 (1/8 inch) pieces. Place into large food storage bag.
- Combine lemon juice, garlic, oregano, olive oil, cooking wine, and parsley in a bowl; mix well.
- Pour marinade over beef in storage bag. Marinate in refrigerator for at least 30 minutes or more.
- Meanwhile, soak 6 inch wooden skewers in water for 20 minutes.
- Preheat grill. Remove beef from marinade. Weave beef strips and tomatoes onto skewers.
