Have Fun with Carrots

Carrots - coloredAlthough carrots are around all year, locally grown carrots are grown during the spring and summer seasons. They are the freshest, crunchiest and most flavorful during this time of the year.

 

Carrots come in a variety of sizes and colors! They may be as small as two inches or as long as three feet. When you think of carrots, you probably think of the color orange. But you can actually find carrots that are white, yellow, red, and purple too.

 

Orange carrots are a great source of beta-carotene which your body turns into vitamin A, providing more than 200% of your daily requirement in just one carrot. The deeper orange the color, the greater the beta-carotene. Carrots have many health benefits such as, cardiovascular benefits, anti-cancer benefits and are great for your eyes and vision!

 

These crunchy vegetables can be eaten as part of a healthy snack or meal. I just love dipping carrots into hummus, roasting carrots in the oven and even just eating them raw when I need a crunch. Did you know that carrots get sweeter when you cook them? Yep, they do!

-The average American eats approximately 12 pounds of Carrots a year.

 

Here’s my favorite Carrot Bread recipe for you to try. Let me know how you like it:

 

Yield: 12 servingsCarrot bread

 

Serving size: 1 slice

 

 

 

 

Ingredients

1 cup whole wheat flour

½ cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon salt

¾ cup unsweetened applesauce

¾ cup sugar

1 cup shredded raw carrots

1 teaspoon vanilla

4 egg whites

 

Instructions

  1. Preheat oven to 350°F.
  2. Lightly coat a loaf pan with non-stick spray, then dust with flour.
  3. Combine flours, baking powder, baking soda, cinnamon and salt and set aside.
  4. Mix applesauce and sugar in a separate bowl and add to dry ingredients.
  5. Add shredded carrots and vanilla extract to the mixture.
  6. Beat egg whites slightly and add to mixture; mix well.
  7. Pour into pan and bake for 50 minutes.
