Almond Crusted Honey Mustard Salmon

Ingredients:
2 (4 oz.) Salmon fillet
2 tablespoons ground almonds
2 teaspoons yellow mustard
2 teaspoons honey
1/2 teaspoon olive oil
1/2 teaspoon lemon juice
Instructions:
- Preheat oven to 350 degrees F.
- Roast ground almonds in the oven for 5-7 minutes.
- Meanwhile, mix mustard, honey, olive oil, and lemon juice in a bowl.
- Spread each slice of salmon with 1 1/2 teaspoon of the honey mustard mixture.
- Reserve remaining mixture.
- Spread 1 tablespoon of the toasted ground almonds over the salmon.
- Bake for 22 minutes in preheated oven.
- Drizzle with remaining honey mustard mixture.
Serving Size: 1 salmon fillet
