Friday is World Egg Day.  Eggs are eaten all over the world, wherever they could be obtained.  The two most popular eggs to eat are chicken eggs, and in some parts of the world ostrich eggs.  Eggs have always been such a popular choice around the world because they are relatively easy to obtain, a great source of protein, and are great in many different types of recipes.

 

One egg has 75 calories, 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat. It also contains iron, vitamins, minerals, and carotenoids. It is especially rich in the antioxidant carotenoids lutein and zeaxanthin. These antioxidants are beneficial for eye health. Eggs also contain choline, which is especially important for pregnant women for fetal brain development; choline also may enhance memory.

 

Eggs are a great breakfast choice. Add a variety of veggies to your omelet or enjoy them poached, or sunny-side-up with whole wheat toast! Scrambled eggs are a classic kid friendly choice.

 

Are you in a rush? No problem! Hard boil a few eggs at the beginning of the week to make for a great on-the-go breakfast or morning snack. The protein-packed egg provides sustained energy to help you start your day off right!

 

But why stop at breakfast? Hardboiled eggs make a great salad topping at lunch, or try topping off your veggie burger with an over-easy egg and skip the condiments!

 

You may even want to consider breakfast for dinner on a busy weeknight. Try a baked egg frittata. Whip up eggs, add veggies, cubed potatoes and cheese. Place the mixture in a dish and bake in the oven until set. Serve with a tossed salad and crusty whole grain bread.

 

You can also make a frittata stove top.  Add a variety of vegetables to your whipped up eggs and place in a skillet on the stove.  My personal favorite is adding zucchini, asparagus, and a sprinkle of parmesan or mozzarella cheese.  Cover the skillet until the eggs are fully cooked. Quick and easy!
