Easy Breakfast Sandwiches

According to the Institute of Food Technologists, research shows that about 18% of Americans, over the age of 2, regularly skip breakfast.  In addition to this percentage, when studies were conducted with young individuals, they found that those who skipped breakfast consumed 40% more sweets, 45% less vegetables, and 30% less fruit than those who ate breakfast!

With a few quick and easy tips, you can add breakfast to your morning routine and start your day ready to handle anything that comes your way.

Breakfast Sandwiches

Do you love breakfast sandwiches but feel you don’t have time in the morning to make them and enjoy them?  Here are 3 easy breakfast sandwich options for you to try:

  • Scrambled Egg Spinach & Tomato English Muffin 

This recipe requires only a few ingredients: eggs, spinach, tomato, a whole-wheat English muffin, olive oil, and salt & pepper.  First rinse and slice the tomato and rinse the spinach.  Split your English muffin open and set aside.  Place your pan over medium heat and heat the oil.  Crack and whisk your eggs in a bowl, sprinkle in salt and pepper, add to pan (cheese can be added at this time if desired), cook to your desired consistency and place on top of muffin.  Place a splash of water in the hot pan, toss in your spinach, season as desired and cook until wilted. Top the egg with the spinach and tomato slice.

  • Egg Frittata Wrap

A frittata is essentially a quiche without the crust and is easy to make.  Simply add any ingredients to your eggs as you wish.  For example, heat a teaspoon olive oil in a nonstick oven-proof pan on medium heat, add a nuked cubed potato, sliced roasted red peppers (fresh or jarred), chopped olives, onions, and grated cheese. Sauté for 5-10 minutes, then pour beaten eggs over the mixture so that everything is evenly spread and let set for one minute. Then transfer to a preheated 375 degree oven and bake for 20-30 minutes until done and brown on top. Voila! Your egg frittata is complete.  Let it sit for a few minutes before sliding it out of the pan.  Cut into slices and add to a whole-wheat wrap for a hand-held egg frittata.  You can even add some hot sauce or ketchup for added flavor.

 

  • Scrambled Egg Muffins

Here’s a recipe that is fun for everyone in the family, especially if your little one wants to help.  Instead of the traditional egg in a skillet, cook the eggs in muffin tins!  Start your eggs as you normally would by whisking them in a bowl with salt and pepper.  Spray a muffin tin with non-stick cooking spray and pour the eggs into each well until ¾ of the way full.  At this time, you can place in any additional ingredients you want.  I like to add in baby spinach and feta cheese with some all-spice on top for added flavor.  Place the tins into a 350 degree oven for 20-22 minutes.  Let them cool for a few minutes before removing them from the tins.  Enjoy!

These Egg Muffins are great to make and freeze. Pop them out of the tins and let them cool briefly. Then wrap each one in plastic wrap and place in a freezer-friendly bag.  To reheat the eggs, simply unwrap and place in the microwave for 90-120 seconds!

Vegetarian Breakfast Sandwich Twist

Are you vegetarian and or vegan and still want an easy breakfast sandwich in the morning? Not a problem!  Keep the same whole-wheat English muffin, but instead of the eggs, substitute with scrambled tofu.  Add avocado, tomato, and non-dairy cheese for a great vegan option!
