Pumpkin Muffins
Serves 12
Ingredients:
1 1/2 cups whole wheat flour
1/4 cup sugar
1 tsp. salt
1 tsp. ground nutmeg
1 1/2 tsp. ground cinnamon
3/4 tsp. baking powder
1/2 tsp. baking soda
1 cup canned pumpkin puree
1/2 cup unsweetened applesauce
1/2 cup chopped walnuts
1/2 cup raisins
Instructions:
- Preheat oven to 35o degrees F.
- In a medium bowl, combine flour, sugar, salt, nutmeg, cinnamon, baking powder and baking soda; mix well.
- Add pumpkin puree, applesauce, walnuts and raisins to mixing bowl and mix well.
- Spray muffin pan with nonstick spray and evenly divide batter amongst muffin cups until 2/3 full. Bake for 12-15 minutes or until toothpick inserted into center of muffin comes out clean.
