Sweet Potato Custard
Sweet Potato Custard
Serves 6
Ingredients:
1 cup mashed sweet potatoes (approximately 1 large sweet potato)
1 cup bananas, mashed (approximately 2 bananas)
1 cup nonfat plain soy milk
2 tablespoons brown sugar, packed
¼ cup seedless raisins
1 tablespoon sugar
1 teaspoon ground cinnamon
Instructions:
1. Preheat oven to 350°F.
2. In a medium bowl, stir together sweet potato and banana.
3. Add soy milk to potato and banana mixture and blend well.
4. Add brown sugar, egg whites and raisins, mixing thoroughly.
5. Spray a 1-quart casserole dish with non-stick spray. Transfer sweet potato mixture to casserole dish.
6. Sprinkle cinnamon over the top of the sweet potato mixture.
7. Bake in preheated oven for 40 minutes or until knife inserted near the center comes out clean.
