Chickpea Vegetable Patties

Chick Pea Vegetable PattiesRecipe by Charna Sheinfeld, Nutrition Intern

Serves 5

Ingredients:

1 (15 oz.) can chick peas, drained
1 small red onion, quartered
1/2 small red bell pepper, halved
1 carrot, cut in thirds
1 egg
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic
2 teaspoons fresh parsley
1/4 cup whole wheat flour

Instructions:

  1. Place all ingredients in a food processor and blend well.
  2. Spray a 9-inch pan generously with nonstick spray.
  3. Form patties with one heaping tablespoonful of the mixture. Cook and brown 2-4 minutes on each side. If needed, spray the pan with nonstick spray in between batches.
