National Watermelon Day

Watermelon childTomorrow is National Watermelon Day and we can all agree that there is nothing better than biting into a sweet, juicy watermelon during the hot summer months.  Although watermelon is made up of 92% water, this juicy fruit we all love is actually packed with nutrients that are great for our health.

Recent research has moved watermelon to the top of the list among fruits containing high amounts of lycopene, a phytonutrient that gives red and pink fruits its red pigment.  Thanks to its high lycopene content, watermelon has anti-inflammatory and antioxidant properties.  The lycopene content in watermelon increases as the fruit ripens, which is great for you since that is when it has the sweetest flavor!

Watermelon also provides benefits for cardiovascular health because it is a rich supply of the amino acid citrulline.  The reason why this amino acid is important for your health is that the kidneys convert it into another amino acid called arginine.  This amino acid is then broken down by the enzyme nitric oxide synthase (NOS) and used to help relax your muscles.  This allows your blood to flow more freely which helps lower your blood pressure.

Along with these great health benefits, watermelon is high in vitamins A, C and B6, which are necessary for fighting diseases, viruses and infections and boosting your immune system

It is no doubt that watermelon is delicious when eaten whole.  However, there are endless ways to enjoy watermelon.  Its high water content makes it the perfect fruit to blend into smoothies; you can also use the juice in lemonades or to add a burst of flavor to seltzer.  Watermelon is delicious when incorporated into salads paired with cucumbers, basil, feta cheese and fresh greens.  One of the great things about watermelon is that because it is so sweet, it is one of the most kid friendly fruits!  Use it to make ice pops, sorbets or pair with whipped cream for a light dessert.

Get creative with your watermelon this summer and enjoy all of the nutrients it has to offer!

Bonnie, you write so well. Loved learning so much about one of our favorite summer fruits. Recently I made an easy recipe for a Watermelon Salad w/ Arugula, Feta and Kalamata Olives. Each bite was a revelation–salty, sweet, savory–delicious and healthy, too.
