Edamame Chickpea Salad 2

Recipe by Charna Sheinfeld, Nutrition Intern

Ingredients:

1 cup shelled edamame beans, cooked
1 cup chickpeas, cooked (canned or fresh)
1 medium red pepper, diced
5 tablespoons cilantro, chopped
2 tablespoons lemon juice
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper

Instructions: 

  1. Mix edamame beans, chickpeas, red pepper and cilantro in a large bowl.
  2. Mix together dressing ingredients. Pour over salad.

Serving Size: 1/2 cup
Yield: 5 servings
