Get Egg-Cited for National Egg Month!

May is National Egg Month and what better way to celebrate than making your favorite egg recipes? Eggs are packed with many vitamins and nutrients, making them a great meal or snack.

 

Each part of the egg, both the yolk and egg whites, are rich in nutrients and have their own health benefits. While you may choose to eat just the egg white, eating the egg whole is the best way to take advantage of all the nutrients in eggs. The yolk contains fat-soluble vitamins, like vitamin D and E, and essential fatty acids.

 

Eggs are also an important ingredient for cooking. Their consistency and chemical make-up are the glue that holds many recipes together!

Eggs are constantly making headlines because they are a food that is frequently studied.   1. Egg Salad: You can use some of the hard-boiled eggs you made for a snack and chop them up with mayonnaise, salt, and pepper.

 

  1. Breakfast Burrito: Start your morning off with a twist. Create a breakfast burrito using scrambled eggs, cheese, and veggies on a tortilla.

 

  1. Frittata: This dish can be customized to your liking with eggs, milk, garlic, salt, pepper, cheese, veggies or meat.

 

  1. Mediterranean Omelet:  A classic breakfast food that is filling and good for you. All you need are eggs, tomatoes, olives, artichokes, feta cheese, and roasted red pepper.

 

  1. Eggs Benedict: An open-faced sandwich using two halves of an English muffin, topped with a poached egg, hollandaise sauce, and Canadian bacon.
