Have you heard this before?

 

Welcome to the club. Notorious for this bad rap, potatoes are typically avoided and advised against in many circumstances. However, recent studies are suggesting otherwise.

 

Research is now disproving the long-held belief that potatoes are linked to the development of Type 2 diabetes. Rather, it is the other aspects of the meal that potatoes are a part of that can lead to this disease. For example, meals that commonly contain potatoes also include red meats, butter, and soft beverages—each of which are linked to a higher risk of Type 2 diabetes.

 

Potatoes themselves, however, do have many health benefits.

 

The good news is, is that there is a multitude of ways to prepare and enjoy this vegetable and reap its’ nutritional benefits.

 

Flipping the Script

 

Not only are potatoes delicious, but they also contain an abundance of nutrients:

 

  • Potatoes are filled with vitamin C, which is a powerful antioxidant. These antioxidants combat free radicals to prevent cell damage. Typically, the darker the potato, the more antioxidants it includes. Additionally, the potato’s skin can contain more antioxidants than the inside of the potato itself.

 

  • When an individual lacks this electrolyte, their body holds onto more sodium than it typically would, and should, consequently raising their blood pressure. Therefore, the potassium that potatoes provide can lower blood pressure and can enhance the function of the heart.

 

  • Potatoes are packed with both soluble and insoluble fiber, which is critical for digestive health.

Following the conclusions from recent studies, it is now recommended to lessen the use of butter, creams, and frying of potatoes to maximize the number of health benefits that you can receive, while also minimizing potential negative outcomes. Boiled potatoes seem to be the way to go, and there are many ways to enjoy them:

 

  • Oven-roasted. This super easy method yields quite delicious results: simply bring your potatoes to a boil, chop them up, season as desired, and pop them into the oven until nice and crispy!

 

  • Baked potato. Upon bringing your potatoes to a boil, cut them in half while ensuring that the slice doesn’t go entirely through the potato. Top with vegetables, or however else you please!

 

See, potatoes aren’t “bad” after all! On the contrary, enjoy!
