Sweet potatoes are known for their distinct orange color and their sweetness, but there is so much more to them. November is National Sweet Potato Month, which makes it the perfect time to learn more about it and try it different dishes.

When you see the orange color of a sweet potato, you can see it is full of nutrients – but which kind?
- Beta-carotene: not only does beta-carotene account for sweet potatoes vibrant orange color, but it’s also an antioxidant. Antioxidants work to reduce inflammation and neutralize damage to your cells.
- Fiber: sweet potatoes are a great source of fiber. Fiber works to aid your digestion and keep you feeling fuller for longer.
- Manganese: keeps bones strong along with calcium and phosphorus.
- Vitamin C: another great antioxidant in sweet potatoes. It boosts your immune system and can help your body stay healthier during the changing seasons.
Selection and Storage Tips for Your Sweet Potato
When choosing your sweet potato, I know it can get a little hard choosing which are the best of the bunch. Make sure your potato is firm and has a smooth skin – steer clear of sweet potatoes with bruises and soft spots.
Once you’ve brought your sweet potatoes home, it’s important to store them properly. Store them in a cool, dark, and dry place. If stored properly, they can last for 4 weeks!

Now that you know all the goodness about sweet potatoes, here are some great ways to try sweet potatoes during this month!
- Sweet Stew:Get out your slow cooker for a lentil and sweet potato stew. Mix a ½ cup of green lentils, 4 cups of vegetable stock, a small diced onion, and 3 – 4 sweet potatoes diced into large cubes. Cook on high for 4 hours or until lentils are soft.
- Sweet Potato Fries:Slice sweet potatoes into wedges, drizzle some olive oil and bake them.
- Mashed Sweet Potatoes:switch out regular potatoes for sweet potatoes and mash them together!
- Baked Sweet Potato:simply bake as is and add cinnamon for a delicious flavor.
